feat: improvements for vega-market-sim job #571

close vegaprotocol/devops-infra#1531 .

Motivation of change

I had to fix the pipeline to ensure my changes to the nullchain in the Vega core wouldn't break this pipeline.

Added support for the following parameters: PARALLEL_WORKERS, TEST_FUNCTION, LOG_LEVEL
Fixed archiving commands
Left comment for further improvements.
Install the required software for the tests - The follow up issue is here (TBD)
