Change border-color on outlined variant

Hello :),

Since we upgraded to the v3, we're having troubles to change the border-color on outlined variant components.
It seems like the colour is linked to the body of the component itself but in our case, we would like to have a better control over the border attributes. If preferable, we would like to avoid sass variables to get something more dynamic which can be used on the component itself.
