Some apps' close/minimize buttons didn't change

Some applications do not work: VSCode (.deb package), MS Edge (.deb package), Firefox, App Center, ...
However Discord (.deb package) still works

Make sure run './install.sh -l' and legacy app theme is whitesur-dark, then restart your desktop

I've installed with that command, here's the log:

  Installed WhiteSur-Dark gtk-4.0 theme in '/home/akhangisntme/.config/gtk-4.0' for libadwaita!

  Some colorsheme extension will re-writes config files in '/home/akhangisntme/.config/gtk-4.0' like: 'custom-accent-colors' you need disable it!

  Run './install.sh --help' to explore more customization features!

I also rebooted the computer but nothing changed. Here is some information you may need (from neofetch), icons theme is WhiteSur-dark already?

WM Theme: Adwaita 
Theme: WhiteSur-Dark [GTK2/3] 
Icons: WhiteSur-dark [GTK2/3]

Install Gnome Tweaks - https://wiki.gnome.org/Apps/Tweaks
After installing the theme, change the theme from that Tweaks program as well.
Hope it solves the problem.
Also remember that Ubuntu uses Snap apps, which might not be compatible with Gnome theming mechanism.

I tried it on virtual machine. As suspected "Snap" seem to be the culprit here.
Even if you install some apps from terminal ubuntu will automatically install the Snap version of that app. Your MS Edge might also be a Snap app.
Non snap apps are working fine with this theme.
