We have a use-case where we have an app that needs to send sql-over-http queries to multiple endpoints in the same app. Currently it is only possible to set the option globally but this change will allow users to override the fetchEndpoint (and fetchFunction) per instance. The behaviour is opt-in so this would not be a breaking change.
