Updated version of gatsby-source-bigcommerce source plugin

Heya all 😃 This is for all devs who are still working currently on their headless, BigCommerce projects with Gatsby, so I started working on this newer version of the gatsby-source-bigcommerce plugin which I just recently acquired and add more updates into it. Im still currently working in progress on some newer features like support for dynamic images and a lot more endpoints supported by BigCommerce, a more updated README, and code refactoring of the legacy code.

The main public repo can be seen here: @epicdesignlabs/gatsby-source-bigcommerce. Currently, the codebase of this plugin is from the original gatsby-source-bigcommerce plugin that can be located here but I made updates to the code which resolves all the pull requests and issues that was present in that repo. So as of right now, my current repo will be in active development and will accept any issues, pull requests, and discussions so you guys can have an updated Gatsby plugin to use.
