I would be happy to help contribute, but I'm looking for guidance as to whether or not there is a technical implementation limitation which is why UART wasn't exposed on this platform. :)

I'm not familiar with the contents of the U2IF stuff, but you can take a look over at https://github.com/adafruit/u2if.
